Red Lentil Curry

Dried lentils are one of the cheapest proteins you can buy, and they cook in 20 minutes flat. This curry makes a whole bag of them taste like a treat.

How to make it

  1. Rinse the lentils in a strainer until the water runs mostly clear.

  2. Cook the onion and garlic in a splash of oil in a large pot over medium heat until soft, about 4 minutes.

  3. Stir in the curry powder and let it bloom for 30 seconds.

  4. Add the lentils, diced tomatoes, coconut milk, and a cup of water. Bring to a simmer.

  5. Cook for 18–20 minutes, stirring occasionally, until the lentils are soft and the curry has thickened.

  6. Season with salt and serve over rice, or on its own with bread.
